It’s true I like many chicken recipes, particularly Italian ones. But chicken piccata is still the first thing that comes to mind when I think of classic Italian dishes.

This easy chicken piccata recipe is always at my rescue when I don’t feel like cooking or when I have to prepare a delicious meal quickly. My secret to preparing low-fat chicken piccata is adding the perfect amount of lemon.

Chicken piccata is one of the few recipes that are frequently available on the restaurant menu. But since it requires less ingredients and preparation time, I like cooking it at home.

Steps to Make Easy Healthy Chicken Piccata

Sometimes preparing simple dishes can also become a hassle but not this time. Why? Because I have divided the recipe into different steps so you can follow it without confusion.

Step One

Purchase 1 lb chicken fillets. You can also use chicken breasts. Cut them lengthwise to make the pieces thinner.

Then coat the chicken pieces with salt and pepper. Lastly, add a layer of flour for crispiness.

Next, take a frying pan. Warm olive oil and butter in it over medium heat. Cook chicken pieces for about seven minutes on both sides.

Then add more butter to the pan. Put chicken broth and wine, along with caper, into the pan.

Season the ingredients with salt and pepper. Let it cook for a while, and then add the cooked chicken. Cook for another ten minutes and serve.

Key Notes:

  • While cooking chicken, it’s possible to overdo it. So, use a food thermometer to ensure the chicken’s internal temperature does not cross 165F.
  • Besides chicken fillets and breasts, you can also use chicken thighs. They may take a little longer to cook. So, properly cook it.
  • Capers can be substituted with chopped green olives for a similar taste.
  • To bring out extra flavors, cook the chicken broth and wine at a low temperature. Do not cook the sauce for long, as it will reduce the taste.
  • Add butter to the sauce to give it a lush gloss.
  • Do not crowd the pan with chicken while frying, as the pieces might not get perfectly brown.
  • Keep the chicken warm while cooking the sauce by wrapping the pieces loosely in aluminum foil.
  • Place the hard or under-ripe lemon in the microwave for a few seconds to loosen the hard or under-ripe lemon.
