1lb chicken fillets
Salt and pepper to taste
Flour for coating
1/4cup olive oil
2tablespoons butter
1/2cup chicken broth
1/4cup white wine
2tablespoons capers
2tablespoons butter
Instructions
Season the chicken with salt and pepper to taste and coat it in flour.
Warm the olive oil and butter in a nonstick frying pan over medium heat and cook the chicken fillets for about 7 minutes on each side. Remove from the pan and set aside.
Stir in the rest of the butter, chicken broth, and white wine.
Stir in the capers and season with salt and pepper to taste the rest of the butter.
Bring the chicken back in the pan and cook for about 10 minutes more and serve.
