I must admit, at first, I was not sure about adding raspberries to chocolate chip cookies. But then I tried a dessert with chocolate and raspberries. Somehow, I liked the flavors and added raspberries to my healthy chocolate chip cookies. 

The ingredients of my recipe make it different from others. I use brown and granulated sugar to get the right sweetness and texture. 

Also, I use semi-sweet chocolate chips, so the cookies don’t turn out to be too sweet. But if you don’t like dark chocolate chips, you can use white chocolate chips. The type of chocolate chip will not change your cookie’s taste. 

I prefer using fresh raspberries as they have a natural taste. Then I froze them before adding them to the recipe. If you do not freeze the raspberries, they might smush while scooping. While the cookies will taste the same, they might not look how you want them to.

Steps to Make Soft Baked Cookies 

Step One 

To make soft, chewy chocolate chip cookies, you first need to take a large mixing bowl and add butter to it. Then add brown and granulated sugar. Finally, mix everything to combine them. 

Next, add one large egg to the mixture and mix well to combine the ingredients. +

Add flour and baking powder to another bowl. Add chocolate chips, frozen raspberries, and the butter mixture. Fold in the mixture to properly combine the ingredients of chocolate raspberry cookies.

At last, you need to bake the soft chocolate chip cookies. So, take a baking tray and put parchment paper on it. Then scoop out cookies and put them on the baking tray.

  • As it’s a simple cookie recipe, it’s unlikely to ruin the flavors. But if you are using low-quality chocolate chips and raspberries, it might bring down the taste of your raspberry sugar cookies. 
  • One mistake that many people are guilty of repeating is not baking the cookies immediately after adding raspberries to the dough. If you keep the dough aside, the frozen raspberries might start defrosting. They will smush while scooping. So, immediately scoop out the dough balls while the raspberries are still frozen to get the right texture. 
  • It’s always better to underbake the tasty chocolate chip cookies instead of overbaking them. That’s because your cookies will keep baking even after they are out of the oven. 
  • You can add lemon juice and zest to your chocolate cookie recipe for a wonderful tangy flavor. Also, the lemon juice will stop the raspberry from turning blue when it comes in contact with baking powder or soda. You can use any lemon, but the recommended one is Meyer lemon because it has sweet flora flavors. 
  • Adding a pinch of salt can enhance the flavors of other ingredients in the thick chocolate chip cookies. 
  • You can use the cookie dough to make chocolate chip bars. But avoid adding brown sugar to your chocolate chip cookie bars dough.

Once you have baked the easy chocolate chip cookies, keep them at room temperature in a container. The cookies will stay fresh for up to 3 days. Or keep them in the fridge, so they stay fresh for 5 days.

Yes, you can freeze the chocolate raspberry butter cookies for up to a month. Keep cookies in an airtight container and then freeze them. Before eating the frozen cookies, thaw them for some time at room temperature.

Can I add vanilla extract to my chocolate chip cookies?

  • 3/4 cup butter, softened
  • 1 cup brown sugar
  • 1/4 cup granulated sugar

  • 1 teaspoon baking powder

Instructions

  • In a large mixing bowl, beat the butter with brown and granulated sugar.
