If I’m asked what’s my favorite comfort food, I’ll always pick my mother’s easy enchiladas casserole. Why? Because I have had this delicious dish at least once every month my entire childhood.

We siblings grew to like this recipe so much that it’s still one of the most requested recipes when we visit our parents. My mom always made extra enchilada, so my father could enjoy it for breakfast the next day.

This authentic enchiladas recipe has ham, cheese, spices, and bechamel sauce. The ingredients together bring out a blast of flavors, which will leave you craving for more. I bake my enchiladas until the cheese melts and gets bubbly.

Don’t worry if you do not have the exact ingredients because my enchiladas recipe is open to changes. But I advise you to use the same ingredients so you can create the magic I do.

I’m always a big fan of homemade ham enchiladas because they are super easy to prepare. In fact, you can beautifully freeze the leftovers and enjoy them as cozy comfort food the next day.

Long story short, cheese baked enchiladas have been my go-to recipes for years. Give this recipe a try and make it your comfort dish for get-togethers and brunches.

Steps to Make Quick Enchilada Casserole

Follow these steps correctly to make the enchiladas casserole with flour tortillas just like I do.

Step One:

To prepare a delicious cheese enchilada casserole, you first need to take six flour tortillas. Then individually place them on a pan.

You need to spread bechamel cheese sauce on top of your tortillas for flavors. Add ham slices on top of the sauce, along with grated cheese.

Lastly, sprinkle some oregano as per your taste and gently roll the tortillas into a roulade.

Step Two:

Once you have prepared tortillas, it’s time to bake your dish. So, take a pan and gently grease it with butter. Arrange rolled tortillas on the pan for baking.

If you have any leftover authentic enchiladas sauce, pour it on the rolled tortillas to get extra flavor.

At last, sprinkle some grated cheese on the top for that cheese texture and taste.

Step Three:

Put the baking tray with rolled tortillas into a preheated oven at 350F. Let the dish bake till the cheese melts and gets bubbly. Then take out the pan from the oven and enjoy your dish.

Key Notes:

  • If you don’t want to add ham to your dish, the boneless chicken should be your choice. It tastes delicious and brings out the best flavors of baked enchilada.
  • For extra flavor, you can add diced red, yellow, or white onion and green chilies. Don’t forget to saute them before using them as fillings.
  • If you don’t have flour tortillas, use corn tortillas to make traditional Mexican-style dishes. But rolling corn tortillas are not easy as they might break in between.
  • You can either use store-bought sauce or prepare it at your home; the choice is yours. But I highly recommend using homemade enchilada sauce to get that extra flavor. The sauce only takes a few minutes to prepare and is made from simple ingredients you can easily find at home.

How to store leftover enchiladas?

If you have prepared enchilada casserole recipes in large quantities, store the leftovers in the fridge. Carefully transfer the dish to a sealed container. Leftover healthy enchilada casserole can be refrigerated for 3 days and frozen for up to 3 months.

Can I make enchiladas ahead of time?

It’s not generally advised to make enchiladas ahead of time because the dish is super easy to prepare. But you can prepare the dish beforehand. Once prepared, store the dish, then bake as directed.

What to serve with an easy enchilada bake?

You can enjoy a delicious enchilada casserole meal with sliced iceberg lettuce. Or you can enjoy it with green beans, Mexican bean salad, chicken breast, chips, salad, or any other dish of your choice.

How to make enchilada sauce?

If you don’t want to use store-bought sauce, here’s an easy way to prepare it at your home. Cook chopped onion and garlic in a pan for a few minutes. Then add green chilies, crushed tomatoes, and oregano. Cook the sauce for a while and then use it for the baked enchilada recipe.

  • 5 oz cooked ham, sliced

  • 2 teaspoons dried oregano

Instructions

  • Take one tortilla and spread the bechamel sauce on top.
  • Arrange the ham slices on top of the tortilla and the grated cheese on top.
  • Sprinkle with dried oregano and roll into a roulade.
  • Arrange the tortilla rolls in a greased casserole pan with butter.
  • Pour the rest of the bechamel sauce on top and sprinkle with grated cheese.
  • Sprinkle with dried oregano and bake in an already heated oven at 350 F or 180 C degrees. Serve and enjoy.
