Yummy one-pot mashed potatoes with egg for breakfast and dinner!
I have been preparing potatoes, eggs, and tomato sauce dishes for a while now. But unfortunately, this delicious dish has failed to gain the recognition it should get. Although it’s underrated, I’m in love with flavors. Plus, the dish gets prepared in no time. So, it’s a win-win for me.
The texture of potatoes simply melts in the mouth. Ideally, this dish is served as a side dish, but you can enjoy it as a main dish for your breakfast or dinner.
Honestly, I came across this dish randomly, but I have fallen in love with the classic combination of eggs, potatoes, and tomato sauce ever since then. You don’t need good cooking knowledge to prepare this dish. Simply follow my guide, and you can create a similar taste.
Delicious Mashed Potato and Egg Recipe
I have never enjoyed adding potatoes to my dish, but this sliced potatoes and eggs recipe has made me realize how flavorful potatoes can be.
I always try to use new potatoes for this dish because they have more waxy texture than starchy. That means the potatoes will hold their shape better and won’t fall in between the cooking process. The waxy potatoes elevate the overall taste of the dish.
What I most like about this dish is how it tastes and feels different from the usual potato recipe. The soft and creamy eggs tasted delicious between the spicy pan-fried potatoes and tomato sauce. It just melts into your mouth and is super filling.
If you are also a foodie like me, you have got to try this yummy potato with eggs recipe. You only need limited ingredients to prepare this filling meal.

Steps to Prepare Roasted Potatoes with Tomato Sauce
Preparing an egg dish with tomato sauce is super easy, but I have divided the recipe into multiple steps. Keep reading to get into details.
Step One:
You first need to peel an onion and wash it under running water. Then carefully dice the onion and keep it aside. Then take three potatoes and peel them. Wash the potatoes, dice them, and keep them aside for a while. Next, you need sausages and dice them.
Step Two:
After you have diced all the items, you can begin the cooking process.
So, take a pan and heat it over medium flame. Add warm olive oil, and then cook the diced onion. After some time, add diced potatoes and sausages. Let everything cook for a while.
For flavors, add salt and pepper as per your taste. Add paprika power and let the potatoes cook for some more time.
Step Three:
Add tomato sauce after a while. Let everything cook for another 5-7 minutes.
Lastly, crack in eggs and cook the dish with the lid on for 10. Serve the meal hot, and enjoy.
Key Notes:
- You can either use store-bought tomato sauce or prepare it at your home. While preparing tomato sauce at home, you can use a food processor or blender. Either way, you must shimmer the sauce for a few minutes to bring out a blast of flavor and color.
- While I have used limited ingredients, you can add more to get extra flavors. For instance, you can use roughly chopped garlic cloves, ground cumin, roughly chopped chilies, black pepper, and mayonnaise. Also, you can add parsley to get that fresh flavor.
- If you prepare scrambled eggs in tomato sauce for kids, properly cook the eggs. Undercooked eggs are not good for kids.
- You can make this tomato-poached egg spicier by adding cayenne pepper or chili pepper while adding tomato sauce. Also, you can season chili pepper, and minced basil leaves to enhance the overall flavors.

What to serve with potatoes, eggs, and tomato sauce?
Potatoes cooked in tomato sauce make a perfect filling meal. You can either serve it as the main dish or as a side dish with chicken breast. Green beans, grilled fish, baked veggies, and tortillas also taste good with sweet potato tomato sauce.
Can you overcook eggs in the dish?
Overcooking eggs in the boiled egg and potato recipe can make it rubbery. The overall taste of the dish will decrease.
