Low Sugar Strawberry BBQ Sauce
1/2yellow onionminced
1small red Fresno pepperminced (or choose a pepper to your spice liking)
3tbsminced garlic
1cuplow sugar ketchup
1/2cupsugar free strawberry preserves
Handful of strawberrieshulled (cut the green leafy cap off); then diced and mashed
1+ 1/2 tbs dijon mustard
1+ 1/2 tsp cayenne pepper
1+ 1/2 tsp hickory liquid smoke

Flank Steak; cubed into 1.5 inch cubesyou can usually find pre-cut steak for kabobs at your grocer
Strawberries
Pineapple chunks
Wood skewerssoaked in water for 30 minutes
Low sugar strawberry BBQ sauce
Optional: Prepared rice
Instructions
Low Sugar Strawberry BBQ Sauce
In a saucepan over medium heat cook the onion, fresno and garlic until the onion is soft and almost translucent.
Add the rest of the ingredients to the pan. Reduce heat, stirring occasionally, simmer for 15-20 minutes or until thickened.
Strawberry Steak Kabobs
Preheat grill to 450 degrees F.
Skewer steak, strawberry and pineapple onto the wet wood skewers
Oil grill grates
Place kabobs on grillP
Grill for 8 to 10 minutes with the lid closed, turning skewers often (every minute or two) until beef has reached internal temperature desired (145 for medium)
Brush on BBQ sauce in the last few minutes of grilling; add more BBQ sauce when plating kabobs.
