1lb chicken fillets
Salt and pepper to taste
1large egg
1tablespoon water
Flour, for coating ( around ½ cup )
3tablespoons olive oil
2tablespoons butter
1lemon slices
Juice of ½ lemon
1/2cup white wine
3/4cup chicken broth
1/4cup chopped parsley
Instructions
First, season the chicken fillets with salt and pepper to taste.
Whisk the egg with the water in a bowl, coat each chicken fillet with the egg mixture, and then coat it with flour.
Warm the olive oil and butter in a nonstick frying pan and cook the chicken fillets for 5 - 7 minutes on each side.
In the same pan, stir in the lemon slices, lemon juice, white wine, and chicken broth. Bring to a boil and cook for about 10 minutes.
Stir in the cooked chicken and chopped parsley and cook for 5 more minutes.
