Smoked Sausage White Bean Spinach Noodle Soup for cold weather, fall and winter!

Smoked Sausage and Spinach White Bean Noodle Soup

Ingredients

  • 14 oz. smoked sausage
  • 8 cups vegetable broth
  • 3 cloves of garlic, minced
  • ½ medium onion, diced
  • 4 tbsp olive oil, divided
  • 1 can cannellini beans, undrained
  • 2 cups rotini pasta
  • 2 cups spinach, roughly chopped
  • ¼ tsp salt
  • ½ tsp pepper
  • 1 tsp oregano
  • 1 tsp thyme


Directions

  • In a skillet, heat 2 tbsp olive oil over medium heat.
  • Chop smoked sausage into ½-1 inch slices.
  • Cook over medium heat, 6-7 minutes, stirring frequently, until cooked through and beginning to crisp on all sides. Set aside.
  • In a large soup pot, heat remaining 2 tbsp olive oil over medium heat. Add chopped onions and minced garlic and cook for 2-3 minutes, until onion is turning translucent.
  • Pour in vegetable broth, and add cannellini beans. Bring to a boil.
  • Add in pasta, sausage, and seasonings. Boil for 5-7 minutes, until pasta is just al dente.
  • Add spinach and cook 1-2 minutes more.
  • Serve hot.
