Chicken Taco Soup

A quick and easy chicken taco soup loaded with vegetables, beans, and chicken sausage that is ready in less than 30 minutes!

Ingredients

  • 1 package al fresco Taco Night Mild Mexican Style Chicken Sausage (one package, both links) sliced into medallions
  • 2 tbsp corn oil
  • 1 small vidalia onion (yellow onion)
  • 1 small red bell pepper chopped
  • 1 small green bell pepper chopped
  • 1 15oz can black beans
  • 1 14.5oz can stewed tomatoes
  • 1 10oz can tomatoes and green chiles
  • 1 15.25oz can sweet corn
  • 1 8oz can tomato sauce
  • 1 tbsp taco seasoning
  • 1 14oz chicken broth
  • 1 tsp salt and pepper to taste
  • choice of toppings, sour cream, guacamole, cheese, tortilla chips etc…

Instructions

  • Heat oil in a large pot over medium heat. Add peppers, onion, a pinch of salt and pepper and saute for 5 minutes.
  • Add chicken sausage, beans, corn, stewed tomatoes, tomatoes and green chiles, and chicken broth. Bring to a simmer and cook for 15 minutes
  • Season with salt and pepper and serve with choice of toppings

This recipe makes about 14 cups of soup. Easily store this in an airtight container for up to a week.
