I always love, appreciate, and recreate a potato recipe. Whether potatoes are mashed, fried, boiled, sliced, or baked, potato recipes make the best comfort food. But among all the preparation methods, I like my baked potatoes because they are easy to prepare and taste wonderful.

Roasted potatoes have that crispy exterior and fluffy interior that leaves you wanting more. I always get tempted by the yummy oven-roasted potatoes and give in to my cravings. And I’ll do it again because oven-baked potatoes taste incredibly delicious.

What’s interesting is that the roasted potatoes recipe does not call for so many ingredients. You just need a pat of butter, a sprinkle of salt, pepper, and paprika powder.

You can add some more ingredients like dried rosemary or other fresh herbs to enhance the overall taste of oven-baked potatoes.

Take two large potatoes and wash them under running water. Dice the potatoes into equal shapes and keep them aside.

Then add salt, pepper, dried rosemary, olive oil, and paprika in a large mixing bowl. Mix the ingredients well, and then add diced potatoes. Toss everything to coat the diced potatoes well with seasonings.

Transfer the potatoes to a baking tray with parchment paper on top. Bake the potatoes for 45 minutes, let them cool, and serve.

Recipe Tips: 

  • If you want to make really good baked potatoes, allow the potato’s skin to turn crispy. Avoid wrapping potatoes in foil, as it can soften the skin. Leave potatoes unwrapped inside the microwave to get that crispy skin texture.
  • Do not skimp on adding salt to the potato skin. That’s because salt turns the potato skin extra crispy and flavorful. With each bite, you will get that salty skin flavor, which is totally addictive. Also, this way, you won’t have to worry about seasoning potato flesh.
  • It’s important to remember that the baking time depends on the size and variety of potatoes. Baking time will be shorter for smaller potatoes and longer for larger potatoes. Don’t hesitate to take the potatoes out once the skin gets crispy and the inside is fork-tender.

Ingredients 

  • 2 lb diced potatoes
  • Salt and pepper to taste
  • 1 teaspoon paprika powder
  • ½ teaspoon dried rosemary
  • 3 tablespoons olive oil 

Instructions 

  1. In a large mixing bowl, toss the diced potatoes with salt and pepper to taste, paprika powder, dried rosemary, and drizzle with olive oil.
  2. Toss everything to combine and transfer to a baking tray lined with parchment paper.
  3. Bake in an already heated oven at 350 F or 180 C degrees for about 40 – 45 minutes.
  4. Serve and enjoy.

  1. Easy but delicious. Honestly you can’t go wrong with potatoes cooked in the oven. They are all so good and take a relatively short amount of time to prepare! I love these little potatoes because they are so versatile and you can season them however you like.
