Pesto Zoodles with Cedar Plank Salmon

Cedar plank salmon over zucchini noodles is a delicious meal for the whole family. Best yet, it’s 5 ingredients!

Pesto Zoodles and Cedar Plank Salmon, Salmon over peso zoodles recipe

Ingredients

  • 3 large zucchinis cut into zoodles (get zucchini noodle cutter here)
  • 2 6 ounce center-cut salmon (or any salmon fillet) skin off
  • 6 stocks of asparagus, chopped
  • 8 tsp pesto
  • Lemon juice to taste

Zoodles Method

  • Spiral cut or zoodle your zucchini into a colander
  • Salt liberally and let stand 20 minutes (removes a lot of the moisture from the zucchini noodles)
  • Rinse off salt and pat zoodles dry
  • Spray fry pan with cooking spray; place zoodles and chopped asparagus into pan and fry over medium heat until tender (can be done right on the grill with a cast iron pan).
  • Add pesto and stir gently.
  • Top with cedar plank grilled salmon and enjoy!

Tip: Prep zucchini noodles first; then grill everything at once, along with the asparagus take about 10 minutes in the frying pan to get tender.

Ingredients

Notes

Prepare cedar planks for grilling two hours before cook time by soaking in water. This will prolong the amount of times you can use your planks.
