onion, diced

cup baby spinach, diced
Parmesan shavings
Instructions
In a large mixing bowl, whisk the eggs with Greek yogurt and salt and pepper to taste.
Warm the olive oil in a nonstick frying pan over medium heat and cook the diced onion and baby spinach.
Pour in the egg mixture and cover with a lid.
Cook for about 10 minutes and serve with parmesan shavings.
