Sprinkle salt and pepper on the steak. Then heat oil in a large cast-iron or over medium-high heat.
Cook steak on both sides for 5 minutes.
Use a meat thermometer for added precision; Medium-Rare: 120 to 125°F. Medium: 130 to 135°F. Medium-Well: 140 to 145°F. Well-Done: 150 to 155°F.
Remove from pan; let stand for 5 to 10 minutes before slicing across the grain.

Allowing the steak to rest for 5 to 10 minutes after cooking will help redistribute the juices throughout the steak.Cutting across the grain is also important as cutting with the grain will create a tough and even chewy bite to the steak.
