Oil a 9x13 casserole dish. Slice potatoes into wedges. Toss in the olive oil.
Season with salt, pepper, and 2 sprigs of rosemary.
Cover with foil and bake for 1 hour; remove the foil the last 10 minutes for browning.
Garnish with the last sprig of fresh rosemary and serve.

Want to jazz this up a bit, try adding a clove of garlic before cooking. Or perhaps add cheese once it comes out of the oven.Serve with sour cream or butter.
