You might have tried Mac and Cheese, but have you ever tasted a twisted and utterly delicious bowl of Mac and Cheese with pumpkin? This dish might sound weird to some, but it’s the perfect fall dish. And do you know what? The pumpkin Macaroni and Cheese recipe is healthy as well.
First, cook the pasta until al dente and set aside.
In a nonstick frying pan over medium heat melt the butter and stir in the flour.
Cook for 1 minute and pour in the whole milk, dijon mustard, and season with salt and pepper to taste, dried oregano, and garlic powder.
Stir in the pumpkin puree and mix until everything is combined.
Pour in the grated cheese and grated parmesan and stir in the cooked pasta.
Mix everything until combined and pour the mixture into a greased casserole pan.
Sprinkle with some extra grated cheese and bake in an already heated oven at 350°F or 180°C degrees for about 20-25 minutes.

Note: Instead of using pre-made pumpkin puree, you can even prepare the homemade puree. The freshly made puree will enhance the flavor of your dish in the best way.
