3tbspolive oil
¾cupleekdiced
1cupcarrotsdiced
½cuppotatoesdiced
¾cuppeasfrozen
1tspdried oregano
½tspgarlic powder
1tspchili flakes
salt and pepper to taste
2cupsshredded cooked turkey
3cupschicken broth
4cupswater
¾cupsuncooked rice
Instructions
In a large pot over medium heat, warm the olive oil and stir in the diced leeks, diced carrots, diced potatoes, and frozen peas.
Stir in the uncooked rice and season with dried oregano, garlic powder, and chili flakes. Add salt and pepper to taste.
Stir in the shredded turkey and mix until combined.
Pour in the chicken broth and water and let it boil the whole mixture for about 40 minutes.

Note: There is no limit to spices. If you like your soup bursting with flavors, you can add sage, rosemary, oregano, and thyme to it.
