1eggplant, cut into slices
2tablespoons olive oil
6slices of bread
2garlic cloves, chopped
Salt and pepper to taste
3oz. feta cheese, crumbled
Chopped parsley for garnish
Instructions
In a nonstick grill pan over medium heat, warm the olive oil and cook the slices of eggplant on each side for about 2 minutes.
Toss the slices of bread in the same pan.
Arrange eggplant slices on top of the pieces of bread and garnish with chopped garlic, salt, and pepper to taste feta cheese and chopped parsley.
