Celebrating Spring with Mish-Mash – A Traditional Bulgarian Delight
Just as the spring trickles down with her abundant inflows of fresh vegetables, it would never get better than this to celebrate your cooking that is in the seasons with a series of good old traditional dish formulas by picking up on those veggies.
Preparation of VegetablesHeat the olive oil on medium heat.Add the chopped onions and sauté until they become translucent and slightly golden.Stir in the chopped bell pepper and continue to sauté until it softens.Add the chopped tomatoes, season with salt and pepper, and cook until the tomatoes break down and form a chunky sauce.
Adding the EggsWhisk the eggs in a bowl and season with a pinch of salt and pepper.Beat the eggs in a bowl, season with salt and pepper, then pour the scramble over the veggies in the sauté pan. Let the eggs sit for a moment, then gently stir and fold to mix everything together. Cook the eggs until set but still moist.
Final TouchesAdd the crumbled cheese over the top of the cooked mixture. Cover the skillet for 1 minute, just to let the cheese slightly melt. Garnish with fresh parsley or dill if using.
