In a large mixing bowl place in the eggs, whole milk, vegetable oil, brown sugar, and granulated sugar.
Mix until combined and stir in the flour, baking powder, ground cinnamon, and mix until smooth batter forms.
Sprinkle in some grated carrots, chopped walnuts, and raisins.
Mix until combined and transfer to a 9x9 inch square brownie pan and smooth it out.
Bake in an already heated oven at 350 F or 180 C degrees for about 30-35 minutes.
Cut into bars and serve with cream cheese glaze.

Notes: If you want, you can follow this recipe for preparing carrots cakes. But then increase the baking time to around 40 minutes. If you don’t want the carrot cake bar to get wet, you must avoid using butter. This recipe is based on oil. Also, you can avoid adding extra nuts as it might make the cake bar too soggy and then, you cannot keep it for a long time. You can enjoy the carrot cake bar with hot coffee or with some other beverage of your choice.
