These peppermint brownie cookies will leave you speechless! They’re amazing and of course, easy to make! You just need a handful of ingredients to make these easy peppermint brownie cookies. Sadly, this year’s virtual cookie swap is coming to an end, but not before we sneak this brownie cookie recipe into the mix! I’m not sure anything can outdo these stacked Christmas tree cookies, but this recipe sure gives it a run for it’s money!

Our last and final recipe, these brownie cookies are for week number 10 of our cookie swap! However, since I was able to submit an extra recipe to make 90 total recipes, this is my 11th cookie contribution!
Just as easy as my other cookie swap recipes, these peppermint brownie cookies stand out among the crowd as one of the easiest! You can whip them up for a party, family gathering, gift them in a nice cookie tin to your neighbor or maybe they’re great cookies for Santa, too!
Peppermint Brownie Cookie Recipe
We only need a handful of ingredients to make these cookies and that’s just how I like it! Simple, quick and delicious! Let’s make brownie cookies!
- 1 box of Pillsbury Family Size Chocolate Fudge Brownie Mix
- 1/4 cup butter, melted
- 4 ounces of cream cheese (1/2 block), room temperature
- 1 egg
- 1 tsp peppermint extract
- M&M’® White Peppermint Candies
Preheat oven to 375 degrees, prepare baking sheet with parchment paper.
Place the brownie mix, melted (and cooled) butter, softened cream cheese, egg and peppermint extract into a bowl and mix it with a stiff spoon. Mix until all of the brownie mix powder is well incorporated. At first it wont seem to mix well, keep going using a folding a pressing technique – it’ll mix up great!
Drop batter by the tablespoon full, two inches apart, onto a parchment lined baking sheet. Try to make the edges as round as possible so they have a nice round cookie shape – use a cookie scoop to assist if you have one! If not, don’t worry too much about it, they’ll come out just fine!
Bake in the oven for 12-14 minutes. Once baked, remove the cookies from the oven and immediately place three M&M’s® White Peppermint candies on each, pressing them into the cookies slightly. Allow the cookies to cool for 2 minutes on the baking sheet, then move them to a cooling rack.
Repeat for the next batch. You will get 27-36 peppermint brownie cookies out of this recipe. Serve these cookies warm or cooled. They’re super fudgy and delicious brownie peppermint cookies and whether served warm or cooled, they’re fantastic!
