Here in New England, it’s chilly about 6 months out of the year. We’re always looking for a new recipe or twisting an old recipe to create something new. Especially when it comes to meals like chili. Chili is one of our favorite dishes to have for dinner — served with a nice slice of Italian bread — Mmm, perfection!

Ingredients

  • 1½ lb ground beef
  • 1 tbs olive oil
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 2 (14.5-oz) cans diced tomatoes
  • 1 green bell pepper, seeded and chopped
  • 3 tbs chili powder
  • 1 tsp kosher salt
  • 1 tsp pepper

Instructions

  • Heat oil in a nonstick skillet over medium-high heat
  • Add ground beef, onion and garlic; cook 8 to 10 minutes or until browned, stirring to crumble
  • Transfer meat and onion mixture to a 4- to 6-quart slow cooker
  • Add tomatoes, bell pepper, chili powder, salt and pepper
  • Cover and cook on low 6 hours

You can add more or less spice, depending on your preference. But, I found that 3tbs of chili powder was plenty. If you want a little smokey flavor, try adding a couple tablespoons of paprika. This is a very basic recipe for spicy chili, you can definitely make it your own by tweaking the ingredients and spices.
