Beef and Veggie Stir-Fry Recipe - Under 500 Calories!

  • ⅓ cup uncooked instant whole grain brown rice
  • 1 tablespoon cornstarch, divided
  • 2 tablespoons low-sodium soy sauce
  • ¼ teaspoon garlic powder
  • ½ lb boneless sirloin steak, cut into thin strips
  • 2 teaspoons canola oil, divided
  • 2 cups fresh broccoli florets
  • ½ small onion, cut into wedges
  • 2 teaspoons brown sugar
  • ¼ teaspoon ground ginger
  • 1 red bell pepper
  1. Cook rice according to package directions. Begin cooking rice at the same time you cook the beef.
  2. Combine 1 teaspoon cornstarch, soy sauce and garlic powder in a small bowl, whisking until smooth. Add steak, tossing to coat; let stand 15 minutes.
  3. Heat 1 teaspoon oil in a large skillet over high heat.
  4. Add steak, and cook 3 minutes or until browned, stirring occasionally.
  5. Remove steak from pan.
  6. Heat remaining 1 teaspoon oil in pan.
  7. Add broccoli, red bell pepper and onion; cook 2 to 3 minutes or until tender.
  8. Stir together 3 tablespoons water, remaining 2 teaspoons cornstarch, brown sugar and ginger in a small bowl, whisking until smooth.
  9. Add beef and brown sugar mixture to pan. Bring to a boil, and cook 1 to 2 minutes or until thickened.
  10. Serve beef and broccoli mixture over rice.
