Cedar plank shrimp grilled and served with Alfredo zoodles; zucchini noodles.

Ingredients
8extra large shrimp; peeled & deveined
3large zucchini; spiralized
1/4cupAlfredo sauce
1tbsmelted butter
1tbsMazola Corn Oil
1tbsminced garlic
1tsppaprika
Pinchof salt
1Cedar plank - soaked in water for two hours before cooking
4wood skewers - soaked in water for 30 minutes before cooking
Instructions
Zoodles
Spiralize your zucchini into a colander; salt liberally and set aside for 20 minutes
Rinse salt off zucchini, pat dry with paper towel
Preheat cast iron skillet on grill and coat with Mazola Corn Oil
Cook zoodles in your cast iron skillet, tossing a couple of times, for 10 minutes or until tender; add Alfredo sauce during the last few minutes.
Shrimp
In a bowl mix Mazola Corn Oil, butter, garlic, paprika, and salt - add shrimp to bowl and coat them well
Double skewer the shrimp into two sets of four
Preheat grill to 350 degrees F, place the soaked plank on grill and close the lid; preheat the plank on the grill for 5 minutes, flip the plank and then add the shrimp
Cook for 5 minutes or until the flesh is milky white or opaque and firm and the outside of the shrimp is a mild pink. Finished internal temp should be 120 degrees F
If you'd like to flip the skewers, you may do so half way through. This can help impart more cedar flavor.
Split zoodles into two service, add your shrimp and enjoy!
Notes
Zoodles take 10 minutes to cook, pre-heating the cedar plank takes 5 minutes and cooking the shrimp takes 5 minutes. Begin heating the pre-soaked cedar plank when you start cooking the zucchini zoodles and everything will be done at relatively the same time.
