Ingredients
1CartonBlue Bunny Mint Chocolate Chip Ice Cream
1Package White Cake Mix
2Large Eggs
1/3cupVegetable oil
1/2tspPeppermint extract
4dropsOrange food coloring or gelfeel free to make your own!
1tubeBlack cookie icing
2tbspOrange sugar crystalsOptional
Instructions
Preheat oven to 350°
By hand, mix together white cake mix, veggie oil, peppermint extract, and 2 large eggs. Add orange food coloring until you get the uniform tint you want.
Using lightly floured hands, roll dough into 2 inch balls. Place dough balls 2 inches apart on parchment lined or non-stick cookie sheet
Lightly spray the bottom of a glass with cooking spray & flatten the cookies down to 1/2" or less. (optional: add sugar crystals if desired)
Bake for 9-11 minutes
Allow to cool 5 minutes on cookie sheet, move to cooling rack to cool completely
Use black cookie icing (hardening kind) to draw black lines on the cookie & create basketballs - One line up and one line across, then two curved lines on either side of the center line. Allow icing to harden
Remove Blue Bunny Mint Chocolate Chip from freezer and allow to soften for 15 minutes (this depends on how cold your freezer is, adjust time as necessary)
Use a spatula, scoop or spoon to place dollops of ice cream on one cookie
Top with another cookie and lightly press down until the cookie is full
Place on cookie sheet or in sandwich baggies; freeze to re-harden the ice cream. Serve and Enjoy!
