Reinventing Holiday Traditions
Recipe: Roasted Red Potatoes
Ingredients
6
medium red potatoes
1/2
medium onion
1/2
tablespoon
thyme
1/2
tablespoon
rosemary
3/4
stick of butter
Pinch
of salt to taste
Pinch
of pepper to taste
Instructions
Slice potatoes in quarters for smaller potatoes and eighths for larger potatoes
Chop onion and slice butter into pads
Place potatoes and onion in roasting pan
Top potatoes with rosemary, thyme, salt, pepper and butter
Bake in oven along side your ham until potatoes are browned on the outside and knife tender, about 2 hours
