Today we’re celebrating the holiday season with a delicious recipe for peppermint cheesecake bites. But this isn’t just any old cheesecake recipe, we’re using Pepperidge Farm® Classic Collection of cookies for our crust, and we’re topping each peppermint cheesecake bite with Pepperidge Farm® Milano® Candy Cane cookies! This cheesecake recipe is absolutely bursting with flavor!

Peppermint Cheesecake Bites
The ultimate cookie cheesecake crust begins with only the best premium cookies from Pepperidge Farm. We’re using Pepperidge Farm Classic Collection for our cheesecake crust.
Cheesecake Cookie Crust
A simple cookie mixture will create the perfect crust for our cheesecake.
Place the cookies in a zipper bag and roll with a rolling pin until finely crushed. Alternatively, use a food processor or knife to process the cookies.
Combine the crust ingredients – butter, brown sugar, flour and processed cookies with an electric hand mixer, pack the mixture into a 9×9 baking dish
Bake the cookie crust in the oven for about 11 minutes.
While the cookie crust is baking, we’ll prepare our cheesecake mixture! Combine cream cheese, egg, sugar, vanilla, peppermint and milk with a mixer.
Note: Beat the cream cheese and sugar together, then beat in the other ingredients.
Once the crust is done baking and the cheesecake filling is ready, you can pour the filling directly into the pan over the hot crust. Return the pan to the oven to finish baking.
When the cheesecake is done baking remove it from the oven and allow it to cool. I like to place my pan on a wire cooling rack. Once it’s cooled to room temperature, place the cheesecake in the refrigerator and allow it to chill for at least 1 hour.
Before your guests arrive, remove the cheesecake from the refrigerator and cut into 2 inch squares, or better yet, use a circle cookie cutter. Top the peppermint cheesecake bites with chopped Pepperidge Farm Milano Candy Cane cookies and if you’d like, a drizzle of chocolate sauce.
