Mozzarella Cheese Chicken Pita Sandwich Recipe

We whipped up a quick and yummy lunch (could also be used as dinner). This Mozzarella Chicken Pocket Sandwich recipe makes two pita sandwiches. This recipe is easy, low in fat, looks good and tastes great too!

  • 1/2 lb boneless chicken breast tenderloins
  • 1/4 cup sun-dried tomato dressing
  • 2 plum tomatoes, sliced
  • 1/2 cup mozzarella cheese
  • 1/2 (5 oz) package spring mix greens
  • 2 whole wheat pita rounds


  • Place tenderloins in a zip-top bag with dressing; allow to marinate several hours.
  • Sauté chicken until browned and cooked through.
  • Heat pita in microwave; cut in half and open.
  • Fill with chicken, tomatoes, mozzarella cheese, greens and dressing.
  • Enjoy!
