An overnight turkey brine recipe that is so easy even you can do it! Everyone will love your turkey this Thanksgiving. If this is your first time brining, awesome! Go for it – this recipe is a great place to start. It’s proven and will have your family and friends coming back for seconds! No more dry turkey at your place! Woohoo!

How to brine a Thanksgiving turkey overnight with easy recipe and ingredients

Note: If your turkey is pre-brined or contains basting liquids that contain salt, it’s best not to brine your turkey. It will be too salty!

Turkey Brine Ingredients

  • 1 cup coarse Kosher salt
  • 1 cup sugar
  • 2 gallons cold water
  • 5 tablespoons unsalted butter, softened
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons unsalted butter, melted
  • 1 cup white wine, chicken broth or water
  • 1 thawed turkey – 10-12lbs

Turkey Brine Directions

  • Combine Kosher salt and sugar in cool water in a large stockpot until completely dissolved.
  • Place the whole turkey in the brine until completely submerged.
  • Cover and refrigerate overnight, up to 14 hours.
  • Remove the turkey from the brine, rinse inside and out under cool running water for several minutes to remove all traces of salt; pat dry with a paper towel.

Is your turkey too big for your stockpot? Use a cooler and add a bag of ice to the mix. Place the cooler in a cold area of your home as well. You must keep the turkey very cold to prevent bacteria growth!

Cooking the Turkey After Brining

  • When ready to cook, set the oven temperature to 350℉ and preheat
  • Remove the turkey from the brine and rinse well, both inside and outside of the bird. Pat the outside of the turkey dry with a paper towel.
  • Stuff the inside with herbs and spices of your choosing
  • Butter the entire outside of your turkey with softened butter, then dust with the rub of your choice.
  • Place the turkey in the oven and roast for 13 minutes per pound or until the breast meat reads 165 degrees and the dark leg meat reads 185 degrees.
  • Remove turkey from the oven and allow the meat to rest for 10-15 minutes, so the juices can redistribute before slicing and serving. Enjoy!
