Often we find recipes on Pinterest, or somewhere else on the web that are overly complicated. Not today. This is my version of street corn and it’s so easy, anyone can make it. Plus, we’re grilling the corn right on the backyard barbecue grill! Why not!

Mexican Street Corn Recipe

Makes about 4 ears of Mexican street corn.

Ingredients

  • Oil – Corn oil works well for this
  • 4 ears of corn, husked
  • 1/4 cup mayonnaise mixed with 1 tbs taco seasoning (homemade recipe coming soon!)
  • Salsa
  • 1/4 cup spicy cheese (pepper jack works nicely)

Directions

  • Prepare a grill for medium-high (400 degrees or so) oil grates as you normally would before grilling
  • Lightly brush corn with oil
  • Grill with the lid closed until tender and charred, rotating the corn every 5 minutes or so – 20-30 minutes
  • Spread each ear with 1 tablespoon of the mayo-rub mixture, sprinkle with cheese and top with 1 tablespoon of salsa
