BBQ Glazed Chicken and Rice

Well, if you’re anything like us you know that answer is many times.

Well, I have some great news! I’ve come up with the most delicious and easy BBQ glazed chicken and rice recipe.

It can be ready in about 20 minutes and it will surely become a weeknight favorite in your home, as it is in ours.

BBQ Glazed Chicken and Rice Dinner Recipe

To make this recipe you’ll only need 5 ingredients.

A chicken breast, Veetee Long Grain Rice, your favorite BBQ sauce, soy sauce and brown sugar.

Cut the chicken breast into 3/4 inch pieces.

Lightly grease a non-stick skillet with non-stick cooking spray. Cook the chicken over medium-high heat until it has browned and cooked through.

Once the chicken is cooked, add the barbecue sauce, soy sauce, and brown sugar.

Reduce the heat to medium and cook for an additional few minutes – until the mixture thickens. Stirring frequently to coat the chicken well.

Once the mixture thickens, remove it from the heat and let it stand.

When your chicken comes off the heat to rest, it’s time to prepare your rice.

Simply grab a package of Veetee Long Grain Rice and follow the instructions on the back of the package to heat it in the microwave.

It literally takes 2 minutes to get your rice ready!

Veetee also sent me packages of Rice Pilaf and Thai Jasmine Rice to try — all are fantastic!

The best part? They’re all two serving packages, so it’s perfect for Katie and I to make with our dinner at home.

After your microwave beeps and your rice is ready, add it to a couple of serving bowls, top it with the BBQ glazed chicken.

If you’re feeling a bit fancy, you can add parsley and sesame seeds for flare and serve with a small dish of soy sauce!

I’m going to adapt this recipe for the grill this summer. Yes, we’ll still be using the Veetee Rice because it’s so easy and convenient!

BBQ Glazed Chicken Rice Bowl

Cook Time 15 minutes
Total Time 20 minutes

Ingredients

  • 1 chicken breast cut into 3/4" pieces
  • 1/4 cup BBQ sauce
  • 2 tbs brown sugar
  • 1 tbs soy sauce
  • 1 package Veetee Long Grain Rice
  • Optional: Sesame seeds and parsley

Instructions

  • Treat a skillet with non-stick cooking spray. Cook chicken over medium-high heat until browned and cooked completely
  • Add BBQ sauce, soy sauce and brown sugar. Stir together, reduce heat to medium
  • Continue cooking, stirring frequently to coat the chicken
  • Once glaze has thickened, remove from heat and let stand
  • Prepare Veetee Long Grain Rice in microwave according to package instructions
  • Place rice in serving bowls, top with BBQ glazed chicken and optional parsley and sesame seeds
  • Serve!
