Fall in New Hampshire

Here in New Hampshire we get the full effects of the fall foliage season. We love watching the tree leaves turn color from green to the various shades of oranges, yellows and reds. With the change of the season brings all the tourists – also known to us as “leaf peepers” – people who come to look at the fall foliage throughout New England.

Although we crack jokes about the leaf peepers who inevitably turn around in our driveway, we too sneak off to take a drive through the foliage filled mountain ranges. Road trips and leaf peeping are fun, and so is baking delicious fall treats. So, today I’m sharing with you a recipe for wicked easy Fall Harvest Apple Pecan Cookies with a sweet Caramel Cream Cheese Frosting. If you like the fall harvest flavors, these cookies are for you!

Apple Pecan Fall Harvest Cookies Recipe

If you’ve been following my blog, you know I love to create quick and easy recipes using awesome products. For this recipe, I’ll be using Mott’s® Apple Sauce, Pillsburyâ„¢ Moist Supreme® Golden Butter Cake Mix, Pillsburyâ„¢ Creamy Supreme® Cream Cheese Frosting and of course the star of our show, M&M’s® Pecan Pie – because, well – who doesn’t love M&M’s®? Of course we’ll be washing these delicious cookies down with a nice Snapple® Apple!

Toss it all in the blender, mix it up, stick it in the oven and voila, you’re done! I’m only kidding – don’t do that! No, seriously – don’t do that! There’s a bit more to the process! Find the full recipe below, after drooling over all the delicious in-process pictures! 😉

Fall Harvest Apple Pecan Cookies

First, we’re going to mix the wet ingredients; your Mott’s® Apple Sauce, oil and an egg in a bowl using a mixer. Find measurements in the recipe further down the page.

Using your mixer, slowly add your cinnamon and the Pillsbury™ Moist Supreme® Golden Butter Cake Mix while mixing. Mix until the wet and dry ingredients are well incorporated.

Spoon stir in your M&M’s® Pecan Pie (grab a coupon here!)

Scoop the cookie dough onto a parchment lined cookie sheet. This cookie dough will be more moist than some dough, but don’t worry – it’s supposed to be!

Toss your Fall Harvest Apple Pecan Cookies into your preheated oven and bake for 10-14 minutes. My oven took 12 minutes to make them perfect. You want them to have a rich golden brown color.

Caramel Cream Cheese Frosting

I promise, the frosting is even easier to make than the cookies, and those were a cake walk (pun intended). What you’ll need to make a sweet caramel cream cheese frosting is your favorite caramel ice cream syrup and a can of Pillsburyâ„¢ Creamy Supreme® Cream Cheese Frosting. Follow the instructions in the recipe and you’ll have yourself an amazing cookie frosting that will surely satisfy your sweet tooth!

Pro tip: Mix in 1/3 cup powdered sugar for a thicker cookie frosting

Easy Caramel Cream Cheese Frosting

Divide the frosting and color with food coloring. I chose to make orange, yellow, brown and left some the off-white caramel cream cheese color.

Fall Harvest Apple Pecan Cookies

A delicious recipe for Fall Harvest Apple Pecan Cookies with a dash of cinnamon and a sweet Caramel Cream Cheese Frosting.

Ingredients

  • 2 x 9.9 oz bag of M&M’s® Pecan Pie
  • 1 box Pillsburyâ„¢ Moist Supreme® Golden Butter Cake Mix
  • 1 can Pillsburyâ„¢ Creamy Supreme® Cream Cheese Frosting
  • 1/2 cup Mott’s® Original Apple Sauce
  • 3 Tbs caramel ice cream syrup
  • 1/3 cup vegetable oil
  • 3 shakes of cinnamon to taste
  • 1 large egg
  • 1/3 cup powdered sugar

Instructions

  • Preheat oven to 350 degrees
  • Mix apple sauce, vegetable oil and egg together with mixer
  • Slowly add and mix in cake mix and cinnamon until incorporated
  • Fold in 1 9.9 oz bag of M&M’s® Pecan Pie (leave the 2nd bag for toppings & sneaking)
  • Spoon 1 1/2 inch scoops onto parchment covered cookie sheet
  • Bake in oven for 9-12 minutes (mine took the full 12) - dark golden brown edges
  • Allow to cool before removing them from the parchment, they are cake cookies so they will be pliable when they're hot
  • Frosting:
  • Mix 1/3 cup powdered sugar and 3 tablespoons of caramel ice cream syrup with 1 can of Pillsburyâ„¢ Creamy Supreme® Cream Cheese Frosting. Split and color if desired. Once the cookies are completely cool, top with a little frosting, M&M’s® Pecan Pie and enjoy!
