We’ve been hitting the trails hard for the past few weekends. Well, as hard as two noobs can.
After exhausting ourselves, and freezing our butts off we like to have a nice hot drink and a snack when we come home; queue blueberry crumb bars and vanilla chai tea!
Did you know that January is hot tea month? Well, it is and that has inspired me to share my favorite hot tea with you.
But you know me, I’m sharing more than just my favorite tea! I’m also sharing a recipe for a delicious blueberry crumb bar!
The combination of hot vanilla chai tea and blueberry jam crumb bar will hit the spot, especially after spending the day outside in the cold January weather!
We’ve Taken Up Snowshoeing!
As you all know we live in New England, so nature is abundant.
There are thousands upon thousands of trails to hike. As newbie snowshoers, we’re not taking too many chances though.
We like hiking the mountains from spring to fall, but we’re sticking to the level snowshoeing trails this year.
Though we have a nice view from our backyard, we know there are other peaks out there with even grander views — we’re working our way up to that snowshoe experience level.
Someday maybe we’ll hike to the highest mountain tops around.
But for now, we’ll stick to the more level terrain…
We may venture over to the Shaker Museum, which has a nice gentle hill to climb where you can see for miles and miles from the top.
But, still, we are only on our third weekend of snowshoeing.
Once I stop tripping over myself on level ground, we’ll move to the steeper inclines and declines.
Even this owl gave me a funny look as I clunked around…
So anyway, after a long day of snowshoeing, or for us beginners – a long couple of hours, we love coming home and making a nice hot cup of vanilla chai tea to warm up and of course snack on a blueberry crumb bar to refuel a bit!
Let’s get to the recipe, shall we?
Blueberry Crumb Bar Recipe
These blueberry crumb bars are quite simple, they have a pop of cinnamon, too!
You can even get the kids involved in making them since one part involves mixing with your hands.
They’ll love that! You can eat these warm or cold. We happen to like them warmed up a bit.
Blueberry Crumb Bars
Ingredients
- ½ cup brown sugar; packed
- 1 cup flour
- 2 tsp ground cinnamon
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/4 cup rolled oats
- 1 ¾ cups cinnamon crunch cereal
- ½ cup butter softened
- ¾ cup blueberry jam
Instructions
- Preheat oven to 350 degrees. Grease an 8 inch square pan with butter or non-stick cooking spray
- Lightly crush cinnamon cereal in bowl with your hands
- Combine cereal, rolled oats, flour, brown sugar, cinnamon, salt and baking soda in a large bowl
- Add the softened butter into the bowl and combine with your hands until you have a crumbly mixture.
- Set aside 3/4 cup of the mixture for the topping. Press the remaining mixture into the bottom of the pan, pack fairly tightly.
- Spread the blueberry jam over the crumble layer
- Add the rest of the crumble to the top and press lightly into the blueberry jam
- Bake for 35 minutes or until moderately browned
- Allow to cool for 30 minutes before cutting to serve.
- Store refrigerated in an airtight container for up to a week; reheat to serve if desired.
