It’s back-to-school time again and fun after school snacks are on the menu! That’s why we’re making apple cookie crumb bars with homemade apple jam today!

These are not just any apple cookie crumb bars, they’re Ghostbusters inspired, ectoplasm filled cookies.

Filled with gooey green apple jam and hints of cinnamon, these cookie crumb bars are a fun and delicious snack!

Apple Cookie Crumb Bars Recipe

With the new Ghostbusters movie in theaters now, I’ve decided to add green apple ectoplasm jam to our apple cookie crumb bars recipe.

These cookie bars are made with Kellogg’s Frosted Flakes® and homemade, green Ghostbusters inspired jam are an awesome back to school treat!

Apple Cookie Bars with Green Apple Jam

I know when I was a kid, there was barely any time to breathe after school.

With all the extracurricular activities, sports games, and homework to do, time was limited and a good snack was a must to keep us going.

Ghostbusters inspired

Also, my favorite movie of all time was Ghostbusters, the original. A group of friends and I even made up our own game and had a Ghostbusters team during recess!

Okay, enough embarrassing stories about me – haha. Seriously though, we saw the Ghostbusters movie this past weekend and it was awesome!

I’m not going to give you any juicy details, but you should definitely watch it with the kids as a treat for getting through their first week of school!

In the meantime, make these delicious Ghostbusters inspired apple cookie crumb bars!

Apple Cookie Crumb Bars Made with Kellogg's Frosted Flakes

Apple Cookie Crumb Bars Recipe

Now down to the recipe you’ve come to make, apple cookie crumb bars!

This delicious after school snack will easily become a favorite in your house, just like it has become a favorite snack in ours. The jam we’re using is my homemade green apple jam recipe.

If you’re not up for making your own jam, you can use any flavor store-bought jam and it’ll work just as well. It won’t be ectoplasm green, but it’ll work!

Ingredients

Begin by gathering the ingredients. Apple jam (my apple jam recipe), Kellogg’s Frosted Flakes®, rolled oats, brown sugar, cinnamon, flour, baking soda, salt and butter. See the recipe, complete with measurements below.

Directions

Once we have our apple cookie crumb bars ingredients ready, we’ll first crunch up the Frosted Flakes in a bowl a little bit with our hands.

No need to pulverize them, just crunch them up a little.

Kellogg's Frosted Flakes Cookie Bars Recipe

Toss together the Kellogg’s Frosted Flakes®, rolled oats, flour, brown sugar, salt, cinnamon, and baking soda.

You can use the same bowl you used for crunching your Frosted Flakes®.

Dry Ingredients for Cookie Bars

Add the softened butter into the bowl and work it with our hands – yep!

The kids can certainly help with this one, but only if they too have washed their hands first! 🙂

Mix the butter in with your hands until you have a nice crumbly mixture.

Cumble Cookie Bars Batter

Prepare an 8×8 pan with butter or non-stick cooking spray. Cut a piece of parchment paper to line the bottom of the pan and place it in the greased pan.

Baker’s tip: greasing the pan before adding parchment helps the parchment stay in place!

Then, spray the parchment paper and sides of the pan with non-stick cooking spray. This makes it super easy to get the cookie bars out with zero problems!

Set aside 3/4 cup of the mixture for the topping.

Press the remaining mixture into the bottom of the pan, making it as level as possible and packing it down with your hands.

You may want to lightly flour your hands for this step.

Apple Crumble Cookie Bars

Spread your jam onto the bottom crumb layer. Make sure you don’t go all the way to the edge of the pan!

Leave a little room around the entire edge.

Making Green Apple Jam Crumb Cookie Bars

Top the jam with the rest of the crumb mixture, pressing the crumbs gently into the jam.

Bake for 35 minutes at 350 degrees or until the top is a medium golden brown.

Ghostbusters Dessert Cookie Bars

Wait until the apple cookie crumb bars have cooled completely before cutting and serving.

Frosted Flakes Recipe for Cookie Crumb Bars

Make ectoplasm jam by adding green food coloring as instructed in the notes of my homemade apple jam recipe.

Apple Cookie Crumb Bars

Apple Cookie Crumb Bars with Ectoplasm Apple Jam

Ingredients

  • 1/2 cup packed light brown sugar
  • 1 cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup rolled oats
  • 1 3/4 cups Kellogg's Frosted Flakes®
  • 1/2 cup butter softened
  • 3/4 - 1 cup green apple jam

Instructions

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 8 inch square pan, and line with greased parchment paper, see blog post for more information.
  • Lightly crunch Kellogg's Frosted Flakes® in bowl with your hands
  • Combine Kellogg's Frosted Flakes®, rolled oats, flour, brown sugar, cinnamon, salt and baking soda
  • Add the softened butter into the bowl and combine with your hands until you have a crumbly mixture - yes it gets sticky!
  • Set aside 3/4 cup of the mixture for the topping. Press the remaining mixture into the bottom of the pan treated with non-stick spray or butter. - Lightly flouring your hands makes this step easier!
  • Spread your jam over the crumble layer
  • Add the rest of the crumble to the top and press into the jam lightly
  • Bake for 35 minutes or until moderately browned
  • Cool, cut into bars and serve!
